DH08SCSS13 Select Digital Food Dehydrator

Excalibur is the OG name in water-reducing foods, popular with both the commercial and professional sectors. But the company also makes several consumer dehydrators that offer larger trays at lower prices. The eight-tray, 7.2-cubic-foot model has all the modern features you’d expect: stainless steel trays (note that it’s not dishwasher safe), a trail light, mesh and fruit towels (which are durable) sheets, French doors, and a digital counter. You can also pause the timer to add minutes if needed, and there is a free digital manual (“Preserve It Naturally”) available via a QR code on the side of the unit.

I tested the Excalibur with fruit, tomatoes, beef, and salted fish, and the machine dried everything in about half the time as my old freezer. around Nesco Snackmaster (see Some were tested) did with plastic tires. Best of all? The 700-watt motor is powerful but not loud. I ran it in the open plan kitchen/living room and set it at 40 decibels, which doesn’t even need to turn on the TV. I wish the warranty was longer than a year, but this is a very versatile dehydrator that the average user will be happy with.

Cosori

Pioneer 5-Tray Food Dehydrator

This old-school Cosori dehydrator features sturdy plastic rings and a screen at the bottom. WIRED’s managing director Lisa Wood Shapiro thought they would produce similar results for the price. He really liked Cosori’s library Dehydration recipeswhich was among the best he had ever tried. (I had to read it myself for this idea, and I still think about The Secret reduce the saltiness of the whole chili.) Disadvantages include its plastic construction—even though the plastic is BPA-free—and the fact that dishwasher trays don’t fit properly in the dishwasher. The cylindrical shape is hard to fit on an already cluttered countertop, but since it’s not the most stylish, you’ll probably keep it in the garage or basement.
